Ingredients:
- 250g Pounded Yam (one wrap)
- 1/4 cup Flour (plus extra for dusting)
Sauce:
- 1/2 cup Tomato, crushed
- 2 Tbsp African Food Box Shito
- 1 tsp Parsley, finely chopped
- 1 tsp Parmesan Cheese, grated
- 1/8 cup Single Cream
- 1/6 cup Cheese (your choice), grated
- Salt and Pepper, to taste
Instructions:
- Prepare the Gnocchi Dough: In a bowl, mix the pounded yam with flour until it forms a smooth dough. Dust a surface with flour, and roll the dough into long, thin logs. Cut into bite-sized pieces.
- Shape and Cook the Gnocchi: Bring a pot of salted water to boil. Drop the gnocchi pieces into the boiling water. Once they float to the top, they are cooked. Remove and set aside.
- Make the Sauce: In a pan, combine crushed tomato, African Food Box Shito, parsley, and cream. Cook until the sauce thickens. Add the cooked gnocchi to the sauce, tossing gently to coat. Add Cooked pasta water if too thick.
