  • 250g Pounded Yam (one wrap)
  • 1/8 cup Corn Flour
  • 1 tsp Parsley, finely chopped
  • 1 tsp Suya Powder
  • Salt and Pepper, to taste
  • Optional: Chilli Flakes
  • 1 Egg, beaten
  • Breadcrumbs, for coating
  • Mozzarella Cheese, cut into small cubes
  • Oil, for frying

Instructions:

  1. Prepare the Pounded Yam: Let the pounded yam come to room temperature. Mix with corn flour, parsley, suya powder, salt, pepper, and chilli flakes (if using). Knead until the mixture is pliable.
  2. Form the Cheese Balls: Take a small portion of the pounded yam mixture, flatten it slightly, and place a cube of mozzarella cheese in the centre. Encase the cheese with the yam mixture and roll into a ball. Repeat this process until all the mixture is used.
  3. Coat and Fry: Dip each ball first in the beaten egg and then roll in breadcrumbs to coat evenly. Heat oil in a frying pan and fry the balls until golden and crispy. Alternatively, for a healthier option, air fry them until they have a crispy texture.
