Ingredients:
- 2 cans of Sardines in Oil
- Plain Flour for dusting
- 1 tsp Garlic, minced
- 1 tsp Ginger, minced
- 1 Tbsp Green Onion, finely chopped
- Salt and Pepper, to taste
- Optional: Chilli Flakes
- 2 Eggs, separated
- 7 slices of Bread, crusts removed
- Sesame Seeds, for coating
- Oil, for frying
Dipping Sauce - Hoisin Chill sauce
- 1 Tbsp Drained Sardine Oil
- 1 tsp Chilli Flakes
- 1 tsp Garlic, minced
- 1 tsp Ginger, minced
- 1 Tbsp Hoisin
- Salt and Pepper, to taste
Instructions:
1. Preparing the Sardine Mixture:
- Drain the sardines and mash them in a bowl. Add minced garlic, ginger, green onions, a pinch of salt, pepper, and chilli flakes (if using). Mix until combined.
2. Egg Separation & Coating:
- Separate the egg yolks from the whites. Add the egg whites to the sardine mix for 5 mins to get a smooth like paste.
- Beat the yolks lightly. Spread the sardine mixture over one side of each bread slice, then coat with the beaten egg yolk.
3. Sesame Seed Coating:
- Generously sprinkle sesame seeds over the egg-coated side, pressing gently to adhere.
4. Frying the Toast:
- Heat oil in a frying pan. Fry the bread slices, sardine side down first, until golden and crispy. Flip and cook the other side.
5. Serving:
- Cut each slice into triangles and serve hot. Enjoy these crispy, savoury bites of goodness!
